Papas potato soup

Papas Potato Soup

This recipe is one I have learned from making with Papa in his kitchen a bunch at home. Recently I moved in with friends and have been planning and cooking meals with them. This is the first meal I made for everyone.

Ingredients

  • Several Pounds of Russet Potatos
  • Heavy Whipping Cream
  • Half n Half
  • Cheddar Cheese
  • Corn Starch
  • Sausage
  • Yellow Onion
  • Butter
  • Salt

Directions

Peeling the potatoes is optional, but this is the first step. Cut the maybe peeled potatoes into chunks. Boil them in a large soup pot. As the potatoes are boiling, begin prep on sausage and onions. Melt about a tablespoon of butter in a frying pan. Dice the onion finely and begin simmering in a frying pan. As soon as the onion start to brown put the sausage in the pan with it and cook until the sausage is done. When the potatoes are finished boiling draing the pot of almost all of the potato water. Place the pot back on the stove and set the eye to low. Pour heavy whipping cream 3/4 of the way to the top of the potatoes, then half n half to just the top of the potatoes. You can at this point clean the grease off the sausage with paper towels. Put the sausage and onions into the pot with the potatoes and stir. Shred the cheese and put it in the pot. In a seperate bowl mix corn starch and water in a mixture which is about half of each. Once that is well mixed, pour it into the pot and stirr (this acts as a thickening agent.) Add your desired spices to taste, turn the eye up a bit to heat everything up and let simmer for a few minutes. You will likely want a lot of salt and pepper to flavor the potatoes. I also like cayenne, paprika, and red chili flakes.

Serve the soup.
